Глядя на отчет autoconfig, который вышел из крушения, я вижу, что нет DataSource. Spring Boot создаст его для вас, если у вас есть нужный материал в вашем пути к классам - например, как минимум, чтобы получить что-то работающее, включите h2 или hsqldb в свой путь к классам.

Кстати, файл XML избыточен, если вы используете Spring Boot правильно.
